This week, I’m celebrating:
1. Roxy who looks really cute in her pink sweater.
2. This sequence of photos of Abby and Frances, who have become the best of friends.
3.The kids were back at school, and I had one more week off! I read a whole bunch of books and prepped for next semester.
4. Spending a day at work. I love having the time off, but I also love work. I spent Wednesday at the office meeting with colleagues and preparing for next semester.
5. Slow cooker pumpkin oatmeal! I combined a few recipes and came up with a really delicious breakfast:
1 1/2 c steel-cut oats
2 c soy or almond milk
3 c water
1 can pumpkin puree
1/3 c maple syrup
2 tsp pumpkin pie spice
2 tsp vanilla extract
Stir all ingredients together in the slow cooker. Cook on LOW overnight for 6-8 hrs. Makes a ton and reheats well in microwave. I added some chopped pecans before serving.
Love seeing your pets-so cute. And-I fix steel cut oats, but didn’t know you could fix them (& other things) in the slow cooker. Great idea! Glad you had a ‘slow’ week & are ready to return to work. Have a good one next week!
Your recipe sounds interesting. I am not a big fan of oatmeal but I love pumpkin so maybe I might like that. Have a great week.
