5 Things I Loved about This Week 1/11/14 #Celebratelu

This week, I’m celebrating:

1. Roxy who looks really cute in her pink sweater.

3.The kids were back at school, and I had one more week off! I read a whole bunch of books and prepped for next semester.

4. Spending a day at work. I love having the time off, but I also love work. I spent Wednesday at the office meeting with colleagues and preparing for next semester.

5. Slow cooker pumpkin oatmeal! I combined a few recipes and came up with a really delicious breakfast:

1 1/2 c steel-cut oats

2 c soy or almond milk

3 c water

1 can pumpkin puree

1/3 c maple syrup

2 tsp pumpkin pie spice

2 tsp vanilla extract

Stir all ingredients together in the slow cooker. Cook on LOW overnight for 6-8 hrs. Makes a ton and reheats well in microwave. I added some chopped pecans before serving.

  1. Love seeing your pets-so cute. And-I fix steel cut oats, but didn’t know you could fix them (& other things) in the slow cooker. Great idea! Glad you had a ‘slow’ week & are ready to return to work. Have a good one next week!
